The notion that white wines are always served chilled and red wines are always served at room temperature has been around for a long time and serves a useful purpose. But by being more flexible with the temperature at which you serve wine, you can increase your satisfaction.

The real criterion for deciding to chill or not to chill should be the wine's body rather than if it is red or white. In general, the fuller bodied the wine the warmer it needs to be in order for it to give up all of its fragrance, aroma, and flavor. Lighter bodied wines tend to give off their scent and flavor more easily, even at colder temperatures. Since white wines tend to generally be lighter bodied than red wines, the conventional wisdom has validity, but there are plenty of exceptions.

Full-bodied white wines such as White Burgundy and good Chardonnay from the New World, as well as Viognier and Semillon can be muted and spoiled by serving them too cold. Light-bodied red wines like simple Pinot Noir, Beaujolais and red wines from the Loire Valley benefit from being slightly chilled. We suggest you experiment a little with your wine. Try putting one of your red wines in the refrigerator for 10 to 20 minutes before serving. See if it doesn't seem a little more vibrant on first opening. And try taking one of your good white wines out of the cooler about 30 to 45 minutes before opening and see if it doesn't show more complexity and nuance than it does right out of the refrigerator.
